Cooking with Stevia Extract
San Antonio TX. “You can save calories by having foods prepared with stevia extract,” says Sylvia Klinger, Registered Dietitian of the Hispanic Food Communications Inc. The Global Stevia Institute (GSI) states that the reason for stevia extract being zero calorie is because steviol glycosides –the components in stevia extractresponsible of its sweetness – are poorly absorbed in the body and pass through the upper gastrointestinal tract, including the stomach and small intestines, fully intact. Klinger explains that when you go over the body requirement of calories is when you start gaining weight. “If you don’t burn those extra calories, it doesn’t mind where they come from, you’re gaining weight. By having foods prepared with stevia extract – instead of sugar for instance – you are saving 100 calories here, 100 calories there, and at the end of the day, those are the few hundred extra calories that you got. In this way you can still have that sweet satisfaction without adding all those calories.”
For those who like to bake with sugar because of the texture it provides, Klinger recommends to use half sugar and half stevia extract in recipes. “Sugar performs some other functions aside from sweetening things in recipes, so you can use half sugar and half stevia extract. But at the same time you must be aware that you can also prepare recipes with only stevia extract as well. I have developed some recipes in which I use only stevia extract and it works really well.”
As stevia can be up to 350 times sweeter than regular sugar, Klinger recommends to start with stevia extract recipes that are already developed. “Once you feel a little more comfortable and confident – when using stevia extract in your kitchen – you can try some of your own recipes,” she says.
