Ways to Use Stevia Extract

San Antonio TX. The Global Stevia Institute (GSI)says that food scientists continue to explore ways to use stevia-based sweeteners. Proposed uses for steviaextract include soft drinks, teas, jellies and jams, ice cream, yogurts and other dairy products, cakes and desserts, confections, and alcoholic beverages.

Dr. Priscilla Samuel, from the GSI, states that steviaextract, as being zero calorie, is currently being used as a tool to reduce energy and sugar intake, which can contribute to reduce overweight. “For those looking for great tasting foods, made with natural-origin and sustainable sweeteners that provide sweet but help control the extra inches and pounds as part of a healthy diet, foods and beverages sweetened with stevia extractare a great option,” says Dr. Samuel.

For Dr. Samuel, stevia extract has still some challenges as an ingredient. As a fairly new sweetener for most people, its awareness is relatively low around the world. “However, as new products are launched and the science behind stevia extract is increasingly known and understood, I expect that the awareness and acceptance of stevia extract is likely to increase dramatically,” she said.

Sylvia Klinger, Registered Dietitian of the Hispanic Food Communications Inc. says that you can save calories by having foods prepared with stevia extract. Klinger recommends for those who like to bake with sugar because of the texture it provides, to use half sugar and half steviaextract in recipes. “Sugar performs some other functions aside from sweetening things in recipes, so you can use half sugar and half stevia extract. But at the same time you must be aware that you can also prepare recipes with only stevia extract as well. I have developed some recipes in which I use only stevia extract and it works really well.”

The GSI states that purified stevia leaf extract can be found in hundreds of foods and beverage products around the world.       People may find stevia extract-sweetened teas, soft drinks, juices, yogurt, soymilk, granola and snack bars, and baked goods. Stevia extract is also found in snacks, cereals, salad dressings, savory sauces, alcoholic beverages, chewing gum, canned fruit and jams, confections, and as a table top sweetener.

 

Stevia extract can be the sole sweetener in a product or blended with other natural caloric sweeteners or other non-caloric sweeteners.
