Learn How to Cook with Stevia Extract

When cooking or baking, you can fully or partially replace caloric sweeteners such as sugar, honey or maple syrup in your recipes and use stevia extract instead. It works well in drinks, smoothies, desserts, baked breads and even various sauces. In this way, you can keep the sweet tastes but without all those calories.

The Global Stevia Institue (GSI) says that since stevia extract is so much sweeter than sugar (up to 350 times), it is not always a one-for-one substitution when using tabletop stevia extractin recipes. For example, if you need 1 cup of sugar in a recipe, you may actually need only ¼ cup or less of tabletop stevia extract to get the same level of sweetness. While the manufacturer’s conversion chart will always be a good place to start, there may be some initial trial and error to get your recipe to your liking. You can play around and experiment a bit to find your ideal level of sweetness. The GSI recommends to start with stevia extract recipes that are already developed and once you feel a little more comfortable and confident when using stevia extract in your kitchen you can try some of your own recipes.

The GSI states that tabletop stevia extract is different than sugar in many ways. Although it provides more sweetness, it lacks some of sugar’s other qualities, like helping to brown foods or adding a tender texture to baked goods. So some recipes may require a mix of sugar and steviaextract, or perhaps a mix of other caloric or non-caloric sweeteners, in order to ultimately get the desired taste and texture qualities. This blending approach is a great way to help reduce total calories, while maintaining the functional benefits that other sweeteners bring to the table.

Stir stevia extract into a glass of iced tea or mug of coffee, whip it into dessert sauces, or learn to bake with it. Other proposed uses for stevia extract include jellies and jams, ice cream, yogurts and other dairy products.
